Known for its nutty flavor and chewy al-dente goodness.  Hulled barley is high in protein, fiber, and essential minerals like manganese, selenium, copper, and phosphorus.  It’s note worthy to mention that barley has the lowest glycemic index of any grain (about 1/3 that of wheat), making it a great choice for diabetics and those who want nourishment released all day.  Soak overnight to cut cooking time in half or mill into a fine nutty flour to enhance any bread recipe.
