As with anything in life, you get what you pay for. This grain is one of the smallest yeilding wheats but packs the highest digestable protein and nutrients of any grain.  Its amazing taste alone should be reason enough to keep this high-protein ancient grain stocked in your pantry. This is one of the origional wheats and is easy to digest packed with Zinc and antioxidants.  As a bonus in a side by side grain assessment, Einkorn was identified for having one of the sweetest aromas of the entire grain family.  The higher price tag is a result of smaller yields but what it lacks in quantity it sure makes up in quality.
