One of our team's favorite. Emmer is an extraordinary grain known for its dominant graham cracker aroma and wide range of applications. Known in Italy as "Farro Medio", this ancient varietal is an excellent choice for whole grain breads, pastas and risotto. As the ancestor of Durum wheat, Emmer is a high protein, low-glycemic and vitreous grain (glass-like) making it ideal for pasta production. As a bonus it's red hue and graham cracker taste make it ideal for bolstering flavor and color in your sourdough loafs above all other grain varietals. We suggest substituting up to 40% of your sourdough recipe with finely milled Emmer to add exceptional color, texture, nutrition and aroma that you just can't beat.
